As the festive season is just round the corner, I thought of
sharing this wonderful, quick and easy recipe to make coconut laddoos. Also,
there is no added oil or sugar in this recipe so it can be enjoyed without
guilt!!
Freshly grated coconut - 1
Milk – ½ Lt
Jaggery – 50g
Rice Flour – 3 Tbsp (Optional)
Cardamom Powder – 1 Tsp
Water – ½ Cup
Raisins – A Handful
Method
Heat the water in a pan; add the jaggery and let it melt.
Bring this mixture to a boil.
Add the grated coconut and cook until the water dries out;
add the cardamom powder and set this mixture aside.
Separately, bring the milk to a boil and let it thicken by
stirring continuously.
Add the coconut mixture to the thickened milk and cook till
it acquires a soft, dough like consistency.
Add the rice flour at this point (if using). This will
further thicken the mixture.
Turn off the heat and let the mixture cool down.
Shape into round balls and stick a little raisin on the top. (Alternatively, you could replace the raisins with almonds or cashews as per
your taste).
There you go; all ready to enjoy!! Do try this at home and
